BEEF BIRRIA

Ingredients;

1 WFF Beef Birria Chuck – ( 1.5# approx.)

2 TBS Olive Oil

Kosher Salt

Black Pepper

3 Cups water (or Beer)

3 Cups Beef Broth or Chicken Stock

¼ Cup White Vinegar


Garnish:

1 Cup White Onion, finely chopped

2 TBS Cilantro, finely chopped

2 Limes, quartered

Salsa, your favorite.

Tortillas, your favorite , warmed.


Procedure:

1. In a large pot or Dutch Oven heat oil until shimmering over medium- high heat.

2. Add beef, brown on all sides, stirring occasionally, about 10-12 minutes.

3. Add water, broth and vinegar to just cover the meat. Bring to a boil, then lower heat to medium and braise meat for 2.5- 3 hours until tender. Season with salt & pepper to taste.

4. Drain beef and tear apart with 2 forks. Serve meat on your warmed tortillas topped with onion, cilantro, your favorite salsa and limes on the side.
