Our standard beef products are not frozen immediately after butchering. Before freezing, our beef undergoes a wet-aging process for a minimum of 17 days. During wet-aging, the beef is vacuum-sealed and held under refrigerated, climate-controlled conditions, allowing it to age in its own natural juices. This process helps improve both tenderness and flavor. After the aging period is complete, the product is then blast frozen to lock in freshness and quality.


Because of this process, customers who require beef that has not been aged at all due to specific dietary needs, such as histamine intolerance, may find that our standard beef products do not meet that requirement.


At this time, the vast majority of our beef follows the same wet-aging process prior to freezing. Product-specific processing details can vary, but we do not currently identify any beef cuts on our website as being frozen immediately after butchering with no aging period.
